Pumpkin Harvest Cake
1 box spice cake mix
1 can (2 cups) Libby's pumpkin pie mix*
� cup applesauce
� teaspoon baking soda
1 teaspoon pumpkin pie spice
3 eggs
2 teaspoons vanilla
Combine-mix according to pkg. directions
Bake in greased and floured Bundt pan-350 oven 50-60 minutes.
Cool in pan 15 minutes before removing. Cool completely.
We sprinkle it with Confectioner's sugar and serve it with a dollop of whipped topping.
*Years ago the Libby's Pumpkin Pie Mix was available in 16 oz. cans. In our area it is now available only in 30 oz. cans so we just measure it out.
Note: This is the MIX, not just plain canned pumpkin
