    Red Velvet Cake

    * 1 cup shortening
    * 2 1/4 cups cake flour
    * 1 1/2 cups sugar
    * 1/2 teaspoon salt
    * 2 eggs
    * 1 teaspoon baking soda
    * 2 Tablespoons cocoa
    * 1 cup buttermilk
    * 2 oz.red food coloring
    * 1 Tablespoon vinegar
    * 1 Tablespoon vanilla

    (preheat oven 300 degrees Fahrenheit)

    Cream shortening, sugar and eggs.
    Add cocoa to red food coloring mix well; then add to sugar mixture.
    Add vanilla.
    Sift dry ingredients.
    Add to mixture.
    Fold in buttermilk.
    Add baking soda to vinegar; mix well and fold into mixture last.

    Spray cake pans with nonstick cooking/baking spray before pouring in cake mixture

    Bake 20-30 minutes (layer cake - 2 8in. round)

    may take longer in 9x13 pan (but not much)

    Fully cool cake before frosting! Frosting recipe follows:

    ~~FROSTING~~

    Cream together(with electric mixer):

    1 cup butter
    1 teaspoon vanilla
    1 cup sugar.

    Whip until fluffy.

    Cook 1 cup water and 2 Tablespoons cornstarch until thick; then allow it to cool down before continuing.
    Add cooled cornstarch mixture to butter/sugar mixture and whip (with electric mixer)
    until it resembles whipped cream (approximately 10 minutes on highest setting).

    This cake is absolutely fabulous...and perfect for Valentine's Day...A must try! (Family Recipe) Be creative ... use heart shaped cake pans..great for cupcakes too. Decorate with red and white colored jimmies or red colored sprinkles. Enjoy! and Happy Valentine's Day!
