    Strawberry-Rice Pie


    8 ounces cream cheese
    1/2 cup sugar
    1 package unflavored gelatin

    1/4 cup strawberry juice

    1-1/2 cups frozen strawberries, thawed

    1 cup cooked rice

    1/2 cup whipping cream, whipped

    1 9-inch baked pie shell


    Recipe



    1. Beat cream cheese and sugar until fluffy. Use electric mixer.

    2. Dissolve gelatin in heated strawberry juice; cool to room temperature.

    3. Combine with cheese mixture. (Make sure all lumps of cream cheese have disappeared.)

    4. Stir in strawberries.

    5. Stir in cooked rice. Chill mixture over ice water bath until thick, but not set.

    6. Fold in whipped cream.

    7. Pour into baked pie shell.

    8. Chill and serve.
