    Sweet and Tart Lemon Cake

    Ingredients:
    3� cups Shirley J Muffin & Cake Mix
    1� cups Water
    3 Eggs
    3 Tbsp. Lemon Extract

    Frosting
    4 cups Powdered Sugar
    1/3 cup Sour Cream
    1 Tbsp. Lemon Extract
    8 oz Cream Cheese

    Directions:
    Preheat oven to 375 degrees. Grease and flour 9x13 baking pan and set aside. Place eggs in a bowl and mix on low until blended. Add Muffin and Cake Mix, water, and lemon extract. Mix on medium speed for 90 seconds and pour into prepared baking pan. Bake for approximately 20-25 minutes, or until inserted toothpick comes out clean. Allow cake to cool before frosting.

    Frosting:
    Place powdered sugar, sour cream, cream cheese, and lemon flavoring in a bowl and beat 90 seconds, or until smooth and creamy. Frost cake when cool.
