Tapioca Cream Pie

* 1/3 cup sugar
* 3 tablespoons tapioca
* 1/4 teaspoon salt
* 3 cups milk
* 1 teaspoon vanilla
* 1 tablespoon butter or margarine
* 2 eggs, lightly beaten
* 1 lightly baked 9-inch pie shell
* Ground nutmeg
Recipe
Combine sugar, tapioca and salt in a saucepan. Add milk and let stand for 5 minutes. Cook and stir over medium heat until mixture comes to a full boil, 6 to 8 minutes. Remove from heat, add vanilla and butter. Stir into beaten eggs. Pour into the pie shell and sprinkle with nutmeg. Bake at 325° for 25-30 minutes or until a knife inserted into the center of the pie comes out almost clean. Cool and serve with a fruit sauce, if desired.
NOTES:
When fresh fruit is in season, decorate the top of this creamy pie with generous slices of your favorite.
