    VW Cake

    Coconut mist cake

    * 3 cups cake flour, sifted
    * 1/2 tsp. salt
    * 1 box (1 pound) powdered sugar
    * 1 cup milk
    * 1 cup flaked coconut
    * 4 egg whites stiffly beaten
    * 2 tsp. baking powder
    * 1 cup butter
    * 4 egg yolks
    * 1 tsp. vanilla


    Lemon Coconut Frosting

    * 3/4 cup sugar
    * 1/4 tsp. salt
    * 1 egg yolk
    * 1 tsp grated lemon rind
    * 1/4 cup cornstarch
    * 1 cup water
    * 1 tbs. butter
    * 1/3 cup fresh lemon juice


    Sift flour once, measure and add baking powder and salt.
    Sift together 3 times.
    Cream butter thoroughly, add sugar gradually, and cream together until light and fluffy.
    Add egg yolks and beat well.
    Add flour alternately with milk, a small amount at a time, beating after each addition.
    Add vanilla and 1 cup coconut.
    Fold in egg whites quickly and thoroughly.

    Bake in 3 greased and floured 9" cake pans.
    Then cut each end and round the ends to look like a Volkswagon car.

    Lemon Coconut Frosting


    In a small saucepan, mix sugar,cornstarch and salt.
    Slowly add water and cook until thickened.
    Add egg yolk, stirring fast add butter, lemon rind and juice.
    Mix well, cool.
    Frost cake and sprinkle coconut over top.

    I baked the cake in bread pans and then stacked them on top of each other, with frosting in between.
