Irish Potato Candy



Ingredients:

1 small Irish potato cooked and mashed

1 box confectioner’s sugar

1 small jar peanut butter



Mix mashed potato and sugar thoroughly. Roll out on sheet of waxed paper. Spread peanut butter over potato mixture.

Roll up like a jelly roll. Chill. Slice thin to serve as needed. Yields about 40 slices.
