    Burrito Casserole 2

    Burrito casserole - from Nick Sundberg

    1 pack Flour tortillas
    2 cups Monterey jack
    1 cup Cheddar
    1 cup Diced tomatoes
    2 teaspoons Cumin
    2 teaspoons Chili powder
    1 medium Onion, diced
    1/2 teaspoon Garlic, minced
    1 pound Ground chuck
    1/4 cup Mild green chilies, chopped


    Recipe

    Brown and drain the beef. Add the onion and cook until just
    soft. Add the garlic, cumin, chili powder, green chilies and
    tomatoes. Simmer for 15 minutes. Pre-heat the oven to 350.
    Lightly oil a 9X13 casserole dish. Cut the tortillas in
    half. Place a layer of tortillas in the dish. Top with some
    of the meat mixture and some of the cheeses. Repeat until
    all ingredients are used (ending with a layer of cheese).
    Bake until hot (10-12 minutes). Serve warm.
    Serves 3-4
