Egg Casserole
Ingredients
2 tablespoons butter or margarine
1/4 cup chopped onion
2 tablespoons flour
1-1/2 cups milk
1 cup shredded sharp Cheddar cheese
6 hard-boiled eggs, chopped
1-1/2 cups crushed potato chips
12 slices, cooked and crumbled bacon
Recipe
Melt butter in saucepan, add chopped onion and cook until soft over medium heat. Blend in flour and gradually add milk, stirring constantly. Cook until thick and bubbly. Add cheese and stir until melted. Grease 8x8-inch square baking dish. Layer half of eggs, cover with half of cheese sauce, half of bacon and half of potato chips. Repeat layers. Bake at 350 degrees for 20-25 munutes. Recipe may be doubled for 9x13-inch pan.
