1 1/2 lbs zucchini, cubed
1/2 cup onion, chopped
1 cup cooked rice
2 cups Cheddar cheese, shredded
1 tsp. pepper
1/2 tsp. salt
3 eggs, slightly beaten
1/2 cup mayonnaise
1 cup soft bread cubes
1/2 cup sliced almonds, (optional)

Directions
Preheat oven to 350 degrees F. Place squash and onion in a
large bowl; cover with boiling water and let stand for 10
minutes. Drain well. Add rice, cheese and seasonings. Blend
in eggs and Mayo and turn into a buttered 2 quart casserole
dish. Top with bread cubes and almonds. Bake for 30 minutes.
Makes 6 to 8 servings
