Shoepeg Corn Casserole

3 cups shoepeg corn (thawed and well drained)
1 cups sour cream
1 10 oz cream of celery soup
½ cup celery, chopped
½ cup onion, chopped
½ cup bell pepper (green and/or red)
¾ cup sharp cheddar cheese, shredded
¼ tsp salt
¼ tsp pepper
topping:
2 cups crushed ritz crackers
¼ cup margarine, melted
sautee your celery, onion, and bell pepper in a couple of tablespoons of olive oil or margarine.
mix remaining ingredients with vegetables
pour into a greased casserole dish
top with cracker topping
bake at 350 degrees for 35 to 45 minutes, until hot and bubbly
