Southwestern Chicken and Pasta
3 cups dry corkscrew pasta
1/2 pound broccoli, chopped
1 large carrot, thinly sliced
1 10.75-ounce can condensed cream of mushroom
soup, undiluted
1/4 cup milk
3/4 cup picante sauce or salsa
2 boneless, skinless chicken breasts, cooked and cubed
Grated Parmesan cheese
Recipe
In saucepan prepare pasta according to package directions. Add broccoli and carrot for the last four minutes of cooking. Drain in colander. In the same pan, mix soup, milk, picante sauce or salsa, chicken, and pasta mixture. Heat through. Top with cheese. Makes 4
