Taco Casserole
1 pound ground round
1 can (8 ounces) tomato sauce
1 small onion, chopped
1 envelope (1.25 ounces) reduced-sodium taco seasoning mix
1/2 teaspoon garlic powder
1 cup (8 ounces) sour cream
1 cup cottage cheese
2 cups crushed tortilla chips
8 ounces (2 cups) shredded cheddar or
Monterey Jack cheese

Green onion and tomato (optional)
In large skillet over medium-high heat, cook beef until browned. Remove from heat and drain liquid. Stir in tomato sauce, onion, taco seasoning mix and garlic powder; set aside. In medium bowl, combine sour cream and cottage cheese; set aside. Place half of the crushed chips in bottom of 2 1/2-quart casserole dish that has been coated with no-stick cooking spray. Spread half of the meat mixture over chips. Cover meat with half of the sour cream mixture. Sprinkle with half of the shredded cheese. Repeat layers. Bake, uncovered, in 350 degree F oven for 30 to 35 minutes, or until cheese melts and casserole is heated through. Garnish with chopped green onion and tomato.
