Impossible Taco Pie
1 lb ground beef
1 medium onion, chopped (1/2 cup)
1 envelope taco seasoning mix
4 oz. can chopped green chilies, drained
3/4 c. Bisquick baking mix
1 1/4 c. milk
3 eggs
1 c. shredded Cheddar or Colby-Monterey Jack cheese
Recipe
Heat oven to 400 degrees. Grease 10 inch pie plate.
Brown beef and onion in skillet; drain. Stir in dry taco seasoning mix. Spread in prepared pie plate. Sprinkle with chilies.
Stir baking mix, milk and eggs until blended. Pour into pie plate over beef mixture.
Bake 25 minutes. Sprinkle with cheese. Bake 8 to 10 minutes more or until knife inserted in center comes out clean. Let stand 5 minutes before serving.
Makes 6 to 8 servings.
Serve this pie with shredded lettuce, chopped tomatoes and green onions.
For a zippier flavor, chop a jalapeno chili and use it instead of the green chilies.
