    Meatless Zucchini Lasagna

    Description
    A quick, inexpensive and healthy meal. It holds in the frig for a leftover as well.

    Ingredients
    3-4 medium zucchini
    1 can of Hunt's spaghetti sauce(any flavor)
    2 small cans of mushrooms
    8oz jack or mozzarella cheese(shredded)
    8oz cheddar cheese(shredded)
    1medium onion(chopped)

    Directions
    Wash and diagonally slice zucchini. In a glass baking dish put a layer of sauce on bottom of dish. Arrange zucchini to fill space in bottom of dish. Spread another layer of sauce on zucchini. Spread mushrooms, onions and cheese. Make these layers until you end up with cheese on the top. Sprinkle with Italian seasoning. Bake in a 350 degree oven for 20 to 30 minutes or until zucchini is tender. Serve hot. Suggest to serve with hot garlic bread and salad if main dish. Otherwise serve with favorite main dish.
