KFC Grilled Chicken
Frying chicken cut into 8 pcs.
Brine Solution
8 cups of water
1/4 cup of salt
2 tsp MSG
Brush with:
1/4 Cup Veg. Oil
1/4 tsp soy sauce
1/4 tsp Liquid Smoke Seasoning
Mix
2 tsp all purpose flour
1/4 tsp salt
3/4 tsp chicken bouillon granules
1/4 tsp beef bouillon granules
1/4 tsp course ground pepper
1/4 tsp crushed dried rosemary
1/4 tsp dried basil
1/8 tsp dried oregano
1/8 tsp garlic powder
Dissolve MSG and salt in water to make brine. Put in chicken pieces,
cover and marinate for 2 hours in refrigerator
After chicken has marinated, mix together the oil, soy sauce and liquid
smoke.
Remove chicken from brine, rinse with water and then dry. Brush each
side first with oil mixture, and then with seasoning mix.
(see note)
Preheat your oven to 350 F degrees or 325 F degrees if convection.
Take some of the left over oil mixture and brush a grill pan with it. Heat
up and when oil begins to smoke, put the chicken skin side down.
Cook for 2-3 minutes. Then turn over and cook other side for 1-2
minutes. Take pan with chicken and place in oven for 20 minutes. When
time is up, turn chicken over and cook another 20 minutes until the
chicken is golden brown. Serve and Enjoy!
Makes 4 servings
Note: once chicken is ready for the oven, I'd cook it on the grill rather
than baking, you'll end up with much better tasting chicken.
