Cranberry Baked Apples

4 large cooking apples*
1/3 cup packed brown sugar
1/4 cup dried cranberries
1/2 cup cran-apple juice cocktail (OceanSpray)
2 Tbsps. margarine or butter, melted
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
Chopped nuts, if desired
Recipe
1. Core apples. Fill centers of apples with
brown sugar and cranberries. Place apples
in 5-6 quart crock.
2. Mix cran-apple juice and margarine;
pour over apples. Sprinkle with cinnamon
and nutmeg.
3. Cover and cook on low 4-6 hours or until
apples are tender.
4. To serve, spoon apples into dessert
dishes. Spoon sauce over apples. Sprinkle
with nuts. 4 servings.
*Good selections of cooking apples are
Jonagold, Rome Beauty, Golden Delicious,
Beacon, San Rose and Wealthy. They should
be apples that will hold up their shape pretty well.
