Chocolate Cinnamon Doughnuts

2 eggs, beaten
1-1/4 c. sugar
1/4 c. vegetable oil
1 tsp. vanilla extract
4 c. all purpose flour
1/3 c. unsweetened cocoa
4 tsp. baking powder
1 tsp. ground cinnamon
3/4 tsp. salt
1/4 tsp. baking soda
3/4 c. buttermilk
Oil or shortening for deep-fat frying
GLAZE:
4 c. sifted confectioners' sugar
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
6 tbsp. milk
Recipe
In a mixing bowl, beat eggs. Add sugar and beat until mixture is thick and lemon-colored. Stir in oil
and vanilla.
In another bowl, combine flour, cocoa, baking powder, cinnamon, salt and soda. Stir in egg mixture
alternately
with buttermilk. Chill. Divide dough in half and put half in the refrigerator. On a lightly floured board, roll
to
1/2 in. thickness. Cut with a 2-1/2 in. floured doughnut cutter. Repeat with remaining dough. Deep-fry
in fat
heated to 375 degrees for 3 minutes. Turning once. Place on paper towels. Combine glaze ingredients
and dip tops of warm doughnuts. Makes 2 dozen.
