Baked Custard
3 eggs, slightly beaten
1/3 c. sugar
Dash of salt
1 tsp. vanilla
2 1/2 c. milk, scalded
Ground nutmeg
Recipe
Heat oven to 350 degrees. Mix eggs, sugar, salt, and
vanilla. Stir in milk
gradually. Pour into 6 ungreased 6-ounce custard cups.
Sprinkle with nutmeg.
Place cups in baking pan, 13 x 9 x 2 inches; pour very hot
water into pan to
within 1/2 inch of tops of cups. Bake until knife inserted
halfway between
edge and center of custard comes out clean, about 45
minutes. Remove cups
from pan; cool. Serve warm or cold.
MAKES 6 servings
Baked Caramel Custard: Heat 1/2 c. sugar in small heavy pan
over low heat,
stirring constantly, until sugar
melts and becomes a golden brown syrup. Divide syrup among
custard cups;
tilt each cup so that syrup coats bottom. Allow syrup to
harden in cups,
about 10 min. Prepare custard; pour into cups. Bake as
directed. Remove cups
from pan; unmold. Serve warm or cold.
