Chocolate Fudge Meringues

4 egg whites, room temperature (yolks go in the filling)
1/4 tsp. cream of tartar
1/2 tsp. salt
1 c. sugar
1/2 tsp. almond extract
1/2 tsp. vanilla
Chocolate Fudge Filling (recipe follows)
chopped nuts
Chocolate Fudge Filling:
6 oz. pkg. semisweet chocolate chips
3 T. butter
4 egg yolks
2 T. light corn syrup
Recipe
Beat egg whites until foamy. Add cream of tartar and salt; beat until whites begin to hold their shape. Gradually add sugar, beating until stiff but not dry. Add extracts and beat again.
Drop batter by teaspoonfuls onto baking sheet covered with waxed paper. With a teaspoon, make a depression in the center of each cookie and fill with Chocolate Fudge Filling. Sprinkle with nuts. Bake in preheated 300F. oven, about 25 minutes.
Makes about 3 1/2 dozen.
Note: try these with chopped Brazil nuts, pecans or hazelnuts especially!!! But any type of nuts will work.
FILLING
Melt chocolate and butter in top part of double boiler. Remove from heat, add egg yolks, slightly beaten, and corn syrup; mix well. Return to heat, cook, stirring for 5 minutes. Remove from heat. Beat until it reaches spreading consistency.
