Fresh Blackberry Mousse and Fruit Parfaits:
Ingredients:
* 1 recipe mini waffle cones (recipe follows)
* 1 recipe Fresh Blackberry Mousse (recipe follows)
* Fresh Blackberries
* Mint for garnish
Method:
To assemble:
Pipe or spoon mousse into waffle cones, layering with berries, finishing with a few berries on top. Garnish with mint. Serve immediately
Makes 1 1/2 - 2 dozen
Balsamic Strawberry, Basil, Creme Fraiche and Brown Sugar Parfaits:
Ingredients:
* 1 recipe mini waffle cones
* 1 1//2 pounds fresh strawberries, sliced
* 1-2 tbsp balsamic vinegar
* 2 tbsp sugar
* Fresh snipped basil
* Creme Fraiche
* Brown sugar
Method:
To assemble:
Whisk together vinegar and sugar. Toss with strawberries.
Layer strawberries with creme fraiche, basil, and a sprinkle of brown sugar.
Garnish with a small dollop of creme fraiche and basil. Serve immediately
Makes 1 1/2- 2 dozen
Fresh Peach, Mango Sorbetto, and Raspberry Parfait
Ingredients:
* 1 recipe mini waffle cones
* 2 -3 fresh peaches sliced
* 1 pint fresh raspberries
* 1 pint Mango Sorbetto
* 1 cup sweetened whipped cream
* 1 5oz container Vanilla flavored Greek Yogurt, stirred
Method:
To assemble:
In a small bowl fold together whipped cream and yogurt.
Layer mini cones with raspberries, peaches, whipped cream mixture, and sorbet.
Finish with a few berries on top.
Garnish with mint if desired. Serve immediately.
Makes 1 1/2-2 dozen
Tropical Fruit, Ginger Glazed Macadamia Granola, with Fresh Lime Cream Parfaits:
Ingredients:
* 1 recipe mini waffle cones
* 2-3 cups sliced fruit, pineapple, honey dew, cantaloupe and watermelon
* Artisan Ginger Glazed Macadamia and Coconut Granola
* 1 cup sweetened Whipped Cream
* 1 5oz container vanilla flavored Greek yogurt, stirred
* Fresh lime zest
Method:
In a small bowl, fold together whipped cream lime zest, and yogurt.
Layer with fruit and Granola and finish with fruit.
Garnish with additional lime zest if desired. Serve immediately.
Makes 1 1//2-2 dozen
Mini Waffle Cone Recipe:
Ingredients:
* 2 eggs
* 1/4 tsp salt
* 4 tbsp butter, melted slightly cooled
* 1/4 tsp vanilla
* 3/4 cup confectioners sugar
* 1/2 cup flour
* Oil or cooking spray
Method:
In a medium sized bowl, beat together eggs and sugar with a fork until light.
Add vanilla and melted butter.
Add flour and mix until smooth.
Cook according to manufactures instruction on waffle or pizzelle iron; brushing iron lightly with oil in between
Makes about 2 dozen
Fresh Blackberry Mousse
Ingredients:
* 1 1/2 cups fresh blackberries
* 1/2 sugar
* 1 envelope unflavored gelatin
* 1/4 tsp water
* Juice of 1/2 a lemon
* Dash of salt
* 2 cups sweetened whipped cream
Method:
In a small food processor, puree blackberries and sugar together. In a medium sized saucepan, sprinkle gelatin over water.
Let it soften for a couple of minutes. Add blackberry mixture, lemon juice, and salt. Bring to a simmer. Remove from heat and cool until slightly thickened. Take a small amount of whipped cram and stir into blackberry mixture.
Then fold in remaining cream. Use soft, or refrigerate to set if desired.
Sweetened Whipped Cream
Ingredients:
* 2 cups heavy whipping Cream
* 1/2 cup confectioners sugar
* 1 tsp vanilla
Method:
In a medium bowl, mix all ingredients to soft peaks.
