Pot De Crème:

Ingredients:
12 egg yolks
¾ cup sugar
3 cups heavy cream
½ vanilla bean
¼ tsp salt
4 oz. milk chocolate chips
4 oz. dark chocolate chips
Method:
In a large sauce pot, heat cream and vanilla bean until it simmers. Then whisk together in a bowl the egg yolks, salt and sugar until it turns pale yellow. Slowly temper in the hot cream into the eggs while whisking. Place the custard in the bowl over a pot of simmering water and add the chocolate. Cook while whisking for 10-20 minutes until it becomes thick. Then pour the chocolate mixture into serving dishes and cool. Serve with whipped cream and Florentine cookies.
