Sabayon with Fresh Berries and Amaretti

10 egg yolks
1/2 c. sugar
1 c. marsala
2 c. heavy cream
Whip cream and reserve. Mix eggs, sugar and marsala well and cook slowly over a double boiler until thickened. Fold in whip cream and chill. When ready to serve, layer a mixture of fresh berries with the sabayon/cream mixture. Top with crushed amaretti cookies.
