    Antique Oatmeal Cookies

    2 sticks butter or margarine
    2 1/4 cups sugar, divided
    2 eggs
    2 teaspoons vanilla
    2 cups flour
    3/4 teaspoon salt
    1 1/2 teaspoons cinnamon, divided
    1 1/2 teaspoons baking powder
    3 cups quick oats
    1 cup chopped nut (optional)
    1 cup raisins, halved (optional)

    Recipe



    In a mixer, combine butter, 2 cups sugar, eggs and vanilla extract.

    Add flour, salt, 1 teaspoon cinnamon and baking powder.

    Add oatmeal and mix well. Allow to stand for 30 minutes.

    Oil the palms of your hands and roll a round teaspoon of dough and place on a cookie sheet 2 inches apart.

    In a shallow dish, combine remainder 1/4 cup sugar and remainder 1/2 teaspoon of cinnamon.

    Lightly moisten the bottom of a flat bottom glass to flatten the cookies. Dip the glass bottom in the sugar/cinnamon mixture and then flatten the cookie. Repeat this process until all the cookies are flattened.

    Bake at 375 degrees for 12 minutes or until lightly browned.

    You may use 1 cup dark brown sugar and 1 cup granulated sugar in place of 2 cups granulated sugar.
