Aunt Audrey's Chocolate Mint Cookies

1-1/4 cups butter (no substitutes), softened
2 cups sugar
2 eggs
2 tsp. vanilla extract
2 cups flour
3/4 cup baking cocoa
1 tsp. baking soda
1/2 tsp. salt
32 round thin chocolate-covered mint patties
Recipe
In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to the creamed mixture, beating well until combined. Drop by tablespoonsfuls 2 in. apart onto ungreased baking sheets. (I made the first sheet too large so I would suggest you just take teaspoon and drop dough from it) Bake at 350 for 8-9 minutes or until puffy and tops are cracked. Invert half of the cookies onto wire racks. Immediately place a mint patty on each. Then top with remaining cookies. Press lightly to seal. Cool completely. Yield: 32 sandwich cookies.
Note from Aunt Audrey: Uncle Charlie loved these and I had to hide them so I could take some to Thanksgiving. Must work quickly with cookies so the mint will melt in center. I let them cool only a minute (which made them workable) and topped them with mint and then again another cookie. Hope you like them.
