    Iced Ricotta Cookies

    List of Ingredients


    1 lb. butter
    2 cups sugar
    3 eggs
    1 lb. ricotta cheese
    2 tsp. vanilla
    1 tsp. salt
    4 cups flour
    1 tsp. baking soda


    ICING

    2 tbsp. butter
    2 tbsp. milk
    2 cups sifted powdered sugar
    Food coloring (optional)


    Recipe

    COOKIES

    Cream together the butter and sugar until light and fluffy. Combine the eggs, ricotta cheese, vanilla and salt and add to the butter mixture. Stir until smooth. Sift together the flour and baking soda and add both mixtures together. Drop by heaping teaspoonfuls onto lightly greased baking sheets and bake in pre-heated 350-degree oven for 12 minutes. Cookies will be in the shape of small mounds. DO NOT LET THEM BROWN. Cool, frost with icing and dip tops into finely chopped nuts or coconut (if desired).


    ICING

    Mix until spreading consistency. Divide in half and tint each half a different pastel color if you wish. For Easter and the warm months, I like to make several pastel shades for the icing. Looks very pretty this way. At Christmas, I'll tint the icing red and green; Halloween or Thanksgiving -- orange; etc.

    If you don't have a lot of time when you make these, I would suggest making half the recipe, as it makes quite a few dozen.
