Jumbo Rocky Road Cookie

1 1/3 cups semisweet chocolate chips, melted
6 Tbsp. butter
2 eggs, ¾ cup sugar
2 tsp dark chocolate cocoa powder (optional)
2 tsp vanilla, ½ tsp salt
¼ tsp baking powder
¼ cup flour
1 cup semisweet chocolate chips
1 cup almonds, roughly chopped
1-1½ cups mini marshmallows
Preheat oven to 350. Line 3 cookie sheets with foil. There's no need to grease the foil, but for this recipe, greased cookie sheets or parchment simply won't work. Use foil.
In a medium, microwave-safe glass bowl, melt the 1 1/3 cup chocolate chips and the butter for one minute. Stir and then heat again for another 30 seconds. Repeat until it's all melted, but barely (and not scorched). Set aside so the mixture can cool slightly.
In a mixing bowl on high speed, beat together the eggs, sugar, cocoa mix, vanilla, salt, and baking powder. Beat for at least two minutes (or longer even) until the mixture is a pale tan and starts to develop small bubbles.
On low speed, mix in the chocolate. Add the flour and mix until it's just incorporated. Mix in the chocolate chips and almonds.
Using a ¼ cup measure, drop the cookie into the corners of each cookie sheet so there's plenty of room for the cookies to spread. Let the dough be nice and rounded on top-they'll flatten and spread out on their own, so you don't need to press them down.
Bake 11-12 minutes. Remove just long enough to press mini marshmallows into the top of each cookie-each one can probably hold about 10.
Return the cookie sheet to the oven for an additional 2-3 minutes so the cookies can finish baking and the marshmallows will toast slightly but won't melt into a sugary varnish.
After baking, slide the foil with the cookies onto a cooling rack. When the cookies are fully cooled, peel them off the foil.
Makes one dozen.
