    Lemon-Frosted Pecan Cookies

    1 cup (2 sticks) butter, softened
    1 cup powdered sugar
    2 tablespoon milk
    1 1/2 cups all-purpose flour
    3/4 cup cornstarch
    1 1/4 cups chopped pecans


    Yield: Makes 4 dozen.

    Lemon Frosting
    1 cup powdered sugar
    1 tablespoon lemon juice
    1 tablespoon almond extract
    1 teaspoon butter, softened
    Yellow food coloring. if desired

    Fifteen minutes before baking, preheat oven to 350 degrees. In a large bowl, cream butter. Add powdered sugar, milk, flour and cornstarch. Beat until blended. Cover and chill. Shape cookie dough into small balls- about 1 teaspoon each- and roll in chopped pecans. Place on ungreased baking sheets and flatten slightly. Bake about 12 minutes. Cool slightly before frosting.

    Lemon Frosting

    In a large bowl or large bowl of electric mixer, beat powdered sugar, lemon juice, almond extract, butter and a few drops of food coloring until smooth. Frost cookies with tinted icing.
