Lucinda's Pumpkin Seeded Cranberry Flat Cookies

3 Egg Whites
1 Cup White Sugar
½ Cup Flour
3 Tbsp. Melted Butter
½ tsp. Vanilla
1 Cup Raw Pumpkin Seeds
¾ Cup Dried Cranberries
Mix all ingredients together, one at a time. Mix well. Drop by spoonful onto a paper lined cookie sheet. Spread out with the back of a spoon. Leave plenty of room between each cookie they will spread out while baking. Place into a 350 degree oven for 15 minutes.
Cool and enjoy with a cup of Spider Cider.
Remember everything tastes better with a little green seed added, other uses.
For flavored seeds use the whole seed, sauté in olive oil then sprinkle with desired dry flavorings, (cheese, ranch, italian, taco, cinnamon and sugar, sauté for 3-5 minutes.
Add hulled pumpkin seeds to sautéed vegetables.
Sprinkle hulled pumpkin seeds on top of mixed green salads.
Toasted melted cheese crisps topped with hulled pumpkin seeds makes a nice addition to soups and salads.
Grind hulled pumpkin seeds with fresh garlic, parsley and cilantro leaves. Mix with olive oil and lemon juice for a tasty salad dressing.
Add hulled pumpkin seeds to your recipes for oatmeal raisin cookies, granola, peanut brittle, homemade breads, soups, cereal and popcorn.
Dip licorice in melted chocolate sprinkle with salted hulled pumpkin seeds.
