    Nana's Pinwheel Cookies

    Note: I wrote out my these directions for these cookies, as Nana's recipe had only the ingredients listed and no directions. This is a very old family recipe and a favorite Christmas cookie.

    List of Ingredients




    Filling:
    1 lb. dates, cut fine
    1/2 cup walnuts, chopped
    1/2 cup sugar
    1/2 cup water

    Cookie Dough:
    1 cup white sugar
    1 cup brown sugar
    1 cup shortening
    3 eggs
    4 cups flour
    1 tsp baking soda
    1 tsp salt

    Recipe



    Filling:
    Cook over low heat until well blended and starts to bubble. Remove from heat. Cool to lukewarm.
    Dough:
    Mix together sugar and shortening. Add eggs one at a time mixing well after each addition. Combine flour, soda and salt. Add to egg mixture. Mix until well blended. Chill dough until firm.
    Divide dough in half. Between 2 large sheets of wax peper, roll out 1/2 of the dough until thin.
    Place half of the filling on dough. Spread out to cover the dough. Roll from long side until sealed.** Repeat with second 1/2 of the dough. Wrap in wax paper and chill.
    Preheat oven to 375 degrees. Slice dough into cookies. Place on cookie sheet and bake for approximately 10 minutes, depending how thich the cookie is cut.

    **You might want to use wax paper to help roll up the dough that has been spread with filling. Once rolled these cookies (well wrapped) can stay in the refrigerator for a couple of weeks.
