Nutty Cookie Sticks

about 3 dozen cookies
2-3/4 cups all-purpose flour
1-1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 cup (1 stick) Shedd's Spread Country Crock Spreadable Sticks
1 cup sugar
1-1/2 tsp. grated orange peel
2 eggs
1 tsp. vanilla extract
1 cup chopped pecans
Recipe
Preheat oven to 350°. In medium bowl, combine flour, baking powder, salt and
baking soda; set aside. In large bowl, with electric mixer, beat Shedd's
Spread Country Crock, sugar and orange peel until light and fluffy, about 3
minutes. Beat in eggs, one at a time, scraping sides occasionally. Beat in
vanilla. Gradually beat in flour mixture until blended. Stir in pecans.
Divide dough in half. On lightly floured surface, shape dough into two flat
logs, about 12 x 2-inches each. Arrange on ungreased baking sheet, 3 inches
apart. Bake 30 minutes or until lightly golden. On wire rack, cool 15
minutes. On cutting board, cut logs crosswise on diagonal into 1/2-inch
slices. Arrange cookie sticks cut-side down on baking sheet. Bake an
additional 15 minutes, turning once. On wire rack, cool completely. Store in
airtight container.
