Thumb Print Cookies
1/4 pound butter -- softened to room temperature
1/4 cup brown sugar
1 egg -- separated
1/2 teaspoon vanilla
1 cup flour
1/4 teaspoon salt
1 cup pecans -- finely chopped
***icing***
1/2 cup vegetable shortening
1/4 pound butter
2 tablespoons boiling water
3/4 teaspoon vanilla
3/4 teaspoon salt
1/2 cup evaporated milk
1 pound powdered sugar

Preheat oven to 350F.
Cream together butter & sugar until light & fluffy. Beat in egg yolk & vanilla. Stir in flour & salt. Roll into 1" balls. Beat egg white slightly with a fork. Dip balls in egg white & roll in chopped nuts. Place 1" apart on an UNGREASED cookie sheet. Press thumb gently in the center of each cookie. Bake 8-10 minutes. Cool on wire racks. Fill cookies with icing if desired. Use rosette tip on decorating tube to fill cookies.
ICING: Mix everything together until well blended. If too thin, add more powdered sugar. Can be kept in ice box 2 weeks or longer.
Makes 3 dozen.
