    Recipe Introduction

    In 1500, Portuguese Admiral Pedro Alvares Cabral, was the first European to reach Brazil and initiated Portuguese colonization. On this day in 1822, Pedro I, son of King Joao VI, declared Brazil an independent empire from Portugal and assumed throne as emperor.

    Chunky Brazil Nut Drop Cookies


    1/2 cup shortening
    1/2 cup butter
    1 cup sugar
    2 eggs
    1 1/2 teaspoons vanilla
    2 1/4 cups sifted all-purpose flour
    1/2 teaspoon soda
    1/4 teaspoon salt
    2 cups cut-up Brazil nuts (cut each nut in about 4 pieces)
    1/2 cup shredded coconut


    Recipe

    Cream shortening, butter, and sugar until light. Beat in eggs and vanilla. Sift together the flour, soda, and salt; stir into the creamed mixture until well blended. Stir in the Brazil nut pieces and coconut.

    With a teaspoon, drop cookie dough onto lightly greased baking sheet, spacing about 2 inches apart. Bake at 350° for about 12 to 15 minutes.

    Makes about 5 dozen small cookies.
