No-Bake "Lite" Cheesecake
2 0.3 ounce packages fat-free, sugar-free gelatin, any flavor
1 cup boiling water
1 cup fat-free sour cream
1 8-ounce package fat-free cream cheese, softened
1 8-ounce container fat-free whipped topping
Recipe
Dissolve gelatin in boiling water and stir constantly for at least 2
minutes; set aside. With a wire whisk or electric mixer blend
together cream cheese and sour cream. Gradually add in gelatin. Fold in
whipped topping. Pour into a deep-dish pie plate lightly coated with
fat-free cooking spray. Cover and chill in the refrigerator until set, about
1 hour.
We frequently prepare this for our guests, They always ask for the recipe.
**Variations --If desired, Coat the pie plate with reduced-fat graham
cracker crumbs.
Change flavors--with lemon gelatin add 1 teaspoon lemon zest. The same with
orange or lime.
During strawberry season, fold 1 cup thinly sliced strawberries in after the
whipped topping
