This is a comfort food dessert where the pears are covered with
sponge cake...serve warm with whipped cream or a warm custard sauce.

Baked Pear Pudding
4 medium -ripe pears, peeled, cored and cut into eighths.
Juice ½ a lemon
1½ cups half and half
¾ cup sugar
3 eggs
1 teaspoon vanilla extract
2/3 cup plain or all-purpose flour
2 Tablespoons unsalted butter
½ cup slivered almonds
Recipe
Preheat oven to 425 degrees.
Place the pears in a baking dish and sprinkle the lemon juice over
them.
Combine the half and half, sugar, eggs and vanilla in a blender or
food processor .
Place the flour in a bowl and gradually stir in the batter mixture.
Pour the batter over the pears, dot with butter and scatter the
almonds on top.
Bake for 45 minutes or until the top is golden and the pudding is
set, when a knife can be inserted into the center and comes out
clean.
