    For a moist, cakelike pudding, use Quaker Cinnamon Life, Life, or Oat Bran

    Country Apple Pudding


    4 large eggs, beaten
    1-3/4 cups firmly packed light brown sugar

    1/4 cup butter or margarine, melted

    2 teaspoons vanilla extract

    1-3/4 teaspoons baking powder

    1/2 teaspoon salt

    3 cups coarsely crushed cereal

    3 cups finely chopped granny smith apples

    1 cup chopped walnuts or pecans

    2 tablespoons bourbon or brandy (optional)

    1/2 teaspoon apple pie spice



    Recipe

    1. Preheat the oven to 325°F.

    2. Combine the eggs, brown sugar, butter, vanilla, baking powder, and salt in a large mixing bowl; stir well. Stir in the cereal, apples, nuts, bourbon, if desired, and apple pie spice. Let stand for 15 minutes; stir well.

    3. Pour the batter into a greased shallow 2-quart baking dish. Bake for 45 minutes. Serve warm with whipped cream or ice cream.

    Yield 6 to 8 servings
