    Eclair Supreme Pudding

    Pudding:

    3 cups nonfat milk
    2 pkg. fat free instant vanilla pudding mix (3 oz. each)
    1 carton (8 oz) lite cool whip
    graham crackers
    Topping:
    3 T. cocoa powder
    3 T. nonfat milk
    1 t. vanilla
    5 T. low fat margarine or butter
    1/8 t. salt


    Beat milk and pudding mix until thick. Add cool whip and set aside. Line a 9 x 13 inch baking dish with whole graham crackers. Pour 1/2 pudding mixture over crackers. Add another layer of crackers, then the remaining pudding. Set aside

    Topping:


    Mix these ingredients in a small pan. Bring to a boil, stirring constantly. Beat a few times. Let cool. Pour over pudding. Refrigerate until serving.
    Makes 10 servings

    Note: By using fat free ingredients, this dessert is so low in calories, the cook probably ends up ahead of the game. It possibly takes more calories to make this dish than are consumed in the eating.
