Feel Good Rice Pudding
2 well-beaten eggs
1/2 cup sugar
1/4 teaspoon salt
2 cups whole milk, scalded
1 and 1/4 cups cooked, cooled white rice (Opt: use imported Basmati rice)
1 cup seedless light or dark raisins
1 and 1/4 teaspoons vanilla
Dash cinnamon
Dash nutmeg
Freshly whipped cream (optional)
Recipe
Preheat oven to 325 degrees. Combine eggs, sugar, and salt. Gradually add scalded milk. Add rice, raisins, vanilla, cinnamon and nutmeg. Pour into greased one-quart casserole. Set casserole in shallow pan and pour water into pan one inch deep. Bake about one and one-half hours. Refrigerate until cool. Serve cold or at room temperature with a little cinnamon sprinkled on top of each portion, and a dollop of fresh whipped cream.
Yield: Four to six servings
