    Fresh Peach Mousse

    1 small box peach Jell-O
    1 cup boiling water
    3 large ripe peaches, peeled, pitted and sliced
    2 tablespoons honey
    1/4 teaspoon vanilla extract
    1 cup Cool Whip


    Recipe

    In a large mixing bowl dissolve gelatin in water.

    In a blender, combine peaches, honey and vanilla extract. Cover and process until smooth. Stir into gelatin mixture. Cover with plastic wrap and refrigerate until syrupy - about 1 1/2 hours.

    Beat mixture on high speed until doubled in volume, about 5 minutes. Fold in the Cool Whip. Spoon into dessert dishes. Refrigerate until firm - about 2-3 hours.

    Garnish with additional peach slices if desired.

    Makes 4 to 6 servings
