    Orange Rice Pudding

    List of Ingredients

    2 tsp softened butter
    1/2 cup raisins
    1/4 cup orange juice
    2 eggs
    1 cup milk, whole or low-fat
    1/3 cup honey
    2 tsp vanilla
    1 tsp grated orange zest
    1/4 tsp cinnamon
    2 cups cooked white rice
    2 tbsp brown sugar


    Recipe

    Preheat oven to 350F. Butter an 8-inch square pan.
    In a small bowl, soak raisins in the orange juice for 20 minutes to plump.
    In a large bowl, beat eggs with milk, honey and vanilla.
    Drain raisins and add to milk mixture. Stir in orange zest and cinnamon. Add rice and stir well.
    Turn mixture into the prepared pan and bake for 15 minutes. Remove from oven and sprinkle with brown sugar. Bake an additional 10 to 15 minutes, or until pudding has set. Serve warm, at room temperature or cold.
    Serves 4 to 6
