    Pumpkin Bread Pudding

    PUMPKIN BREAD PUDDING

    12 oz eggs
    6 oz granulated sugar
    2 oz egg yolks
    1 t. ground cinnamon
    1 t. ground nutmeg
    ½ t. salt
    ½ t vanilla
    12oz milk
    9 oz brioche
    3oz butter
    8oz pumpkin puree
    Procedures:

    Cut the brioche in half inch squares; drizzle with melted butter and toast in the oven at 300’ degrees for 8 minutes. Combine milk and three ounces of sugar and bring to boil. In another bowl combine egg yolk, vanilla, and remaining sugar, Temper with the hot milk and pumpkin puree; then mix together. Strain through a chinois cap. Add the bread, spices, and salt and let it soak for twenty-five minutes. Place in four ounce soufflé cup. Then put in an oven proof pan with a half inch of water (water bath), bake at 350 degrees for forty to fifty minutes.
