Moroccan Style Scallops

1 cup diced tomato
¼ cup sliced black olives
¼ cup diced red onion
6 oz dry white wine (optional)
1 tsp dry cumin
½ tsp cardamom
1 tsp dry ginger
2 Tbsp unsalted butter
Pinch salt and pepper
8 med. scallops
Combine first 8 ingredients in a hot sauté pan cook for 4 to 5 minutes while that's cooking down take scallops pat dry season with a little salt and pepper add 1tbsp olive oil make sure pan is very hot before adding scallops to the pan. Add scallops to pan seasoned side first, if pan is too hot reduce heat continue cooking on that side til you get a good crusty seal 2-3 minute then flip scallops over and sear that side for another 2-3 minutes. Remove from pan and put on plate take sauce sauce and pour sauce equally on both portions. Serve with your favorite side and or vegetable.
