Chinese Fried Rice
3 cups cooked white rice or rice of your choice * see notes below
2 eggs
3 TB milk
1 cup frozen peas and carrots, thawed
2 green onions, chopped
3 TB butter, margarine or vegetable oil
Soy sauce
Optional Ingredients:
Ham, pork loin, chicken, turkey, or shrimp
Mushrooms, washed and sliced
Recipe
Cook rice according to package directions. I've been told that the rice should be chilled for best results, but I have made it both ways with good results. In a small bowl, beat eggs and milk with a fork or whisk until mixed well. (Add leftover extra yolks if using Kung Pao Chicken recipe.)
Heat butter or oil in a large skillet over medium-high heat. If using
uncooked meat, add meat and/or mushrooms and saute until just tender, otherwise, add diced meat with other ingredients. Stir in rice, peas and carrots and green onions until mixed. Make a well in the center of rice mix and add egg mixture. Cook, stirring gently until eggs are set and blend in rice mix. Add just enough soy sauce to color the rice a little and serve extra at the table.
Serves 4-6
Notes: I usually use about ? cup dry rice (1 cup cooked) per person and adjust other ingredients accordingly. I also prefer to scramble the eggs in a separate skillet, because they turn out fluffier and you can gently blend them in before adding soy sauce.
