Gang Keow Wan - Green Curry

5 oz. Chicken
5-6 Slices zucchini
5-6 Slices green bell pepper
5-6 Slices red bell pepper
5-6 Slices bamboo shoots
2 T. Green peas
2-3 branches Thai basil
1 can Coconut (19 oz.)
3-4 leaves Lime leaf
1 T. Green curry paste
1 t. Salt
1/4 C. Palm sugar
1 T. Water
Heat coconut milk in a sauce pan to below a boil. Add green curry paste and lime leaf. Mix in and allow to heat with coconut milk. In separate dish mix water and palm sugar. Heat in microwave to melt palm sugar in the water. Then add to coconut milk. Add salt and continue to heat for 5 minutes. Add chicken to coconut milk. Allow chicken to cook. When chicken is close to done add vegetables. Mix into mixture and allow to heat vegetables. Then add Thai basil. Serve over Jasmine rice.
