    Ensalada Rusa (Russian Salad - Spanish style)

    This is a recipe that was given to me by my host mom in Spain. She made this several times and I absolutely love it. It's really easy to make. It is common to substitute the mayonnaise for a olive oil/vinegar mix to cut down the fat. I used a light mayo and it is still delicious.

    Ingredients

    1 can garbanzo beans
    1 can peas and carrots
    1 cup of green olives
    4 hard boiled eggs chopped
    1/2 bag of frozen hash browns
    1 pouch of salmon (can use tuna if you choose)



    Directions
    Put into bowl and set aside:
    Peas and carrots (drained), garbanzo beans (drained), salmon, hard boiled eggs chopped, olives

    Boil hash browns by following directions on package. Add cooled hash browns to mix and then mix in the mayonnaise.

    Chill and serve

    Number of Servings: 8
