Fresh Market Sour Cream Turkey Enchiladas

* 3 cups shredded turkey
* 2 (10.5 oz.) Cream of Chicken soup
* 1 pint sour cream
* 1 (4 oz.) can shopped green chilies
* Vegetable oil
* 1 dozen corn tortillas
* ¾ cup chopped onion
* ½ cup chopped red bell pepper
* 3 cups shredded Taco blend cheese
Mix turkey, soup, sour cream and chilies together. Heat oil in small pan; dip each tortilla into hot oil until softened, drain on paper towel. Spread a thin layer of the turkey mixture onto the bottom of a 9x13-in. casserole dish. Spread a few tablespoons of the turkey mixture down the middle of each prepared tortilla, sprinkle with chopped onions, peppers and cheese. Roll up all 12 tortillas and place seam-side down in prepared pan. Reserve some of the turkey mixture to pour over the top of tortillas and sprinkle with cheese. Bake for 25-30 minutes at 350 degrees. Garnish as desired.
