    Healthy Chicken and Black Bean Quesadillas

    List of Ingredients

    2 each chicken breast halves without skin, thinly sliced
    2 Tbls. South of the Border Spice
    I can Black Beans, rinsed and drained
    1/4 cup green onions, sliced
    1 cup Monterey jack cheese, shredded
    12 each flour tortillas
    vegetable cooking spray
    1/2 each avocado, pitted, skinned, sliced
    1 cup salsa


    Recipe

    Combine the South of the Border Seasoning with the chicken. Sauté or boil till cooked through. Heat a large sauté pan and spray with vegetable spray. Place one tortilla in the pan, add a little chicken, beans, cheese, and green onion, then cover with a second tortilla. Slowly heat for two to three minutes. With a spatula, turn and heat for another two to three minutes. Cut into wedges and serve with avocado and salsa for a simply delicious meal.
