Corned Beef Hash
1 (12 ounce) can corned beef
4 medium white potatoes
1 small onion
Empty canned corned beef into 10-inch skillet. Peel potatoes, dice and boil slowly until done. Chop up onion and add to corned beef. Mix well. Just cook corned beef on low heat about 15 minutes. Drain potatoes and reserve juice. Add potatoes to corned beef and add enough potato juice until desired consistency, not dry, not too moist. Serve with garlic bread and cole slaw
