    EASY GRILLED CHICKEN
    2 sm. cans frozen orange juice concentrate
    1/2 c. Worcestershire sauce
    Chicken pieces

    Blend orange juice concentrate (undiluted) and Worcestershire sauce
    in blender. Do not add any other ingredients. Marinade chicken
    pieces about 1 hour. Cook over low flames, turning occasionally and
    basting often with marinade.

    LEMONADE CAKE
    1 box Duncan Hines yellow cake mix
    1 sm. box lemon Jello
    3/4 c. boiling water
    4 eggs
    3/4 c. Crisco oil
    1 sm. can frozen lemonade
    1/2 c. sugar

    Mix Jello and boiling water until dissolved. Let cool. In large bowl mix cake mix, eggs, oil and Jello mixture. Mix with a spoon, not a mixer. Spray bundt pan with Baker's Joy. Spoon in cake mixture. Bake at 325 degrees for 1 hour, without opening oven door. In a small bowl mix frozen lemonade and sugar together. Then pour or spoon over cake as soon as it comes out of the oven. Then allow to cool before cutting.

    EASY SLOPPY JOES
    1 lb. hamburger, salt and pepper to taste
    1 lb. onion, chopped
    2/3 can tomato soup
    1 tsp. (each) sugar, dry mustard
    1 tbsp. vinegar
    3 tbsp. catsup
    1/2 c. finely chopped celery

    Cook together over slow heat for 1/2 hour. Spread on hamburger buns.

    Zesty Mexican Cauliflower
    For 4 servings
    Weight Watcher Points - 2 Points

    1 cup cauliflower florets
    1/3 cup lowfat sour cream
    2 tsp. low fat mayonnaise
    3/4 tsp. hot red pepper sauce
    1/3 cup salsa
    2 Tbs. plus 2 tsp. low fat cheddar cheese, shredded
    1 cup fresh corn, cooked

    Cook the cauliflower florets by steaming them over boiling water for 5 minutes until tender. Drain and set aside. Combine all sauce ingredients in a large saucepan and cook over medium heat until bubbly, stirring constantly. Add the cooked cauliflower and corn.
    Toss well and serve. Note: Ideally diabetics should meet with a professional dietitian to plan an individualized diet plan. There is no single diet that meets all the needs of everyone with diabetes.
