Green Chili Squash Casserole
6 medium yellow squash
salt to taste
pepper to taste
1 small onion, chopped
1 cup fat free Cheddar cheese
1 can green chilies, chopped
Boil onion and squash until tender done. Drain well and add cheese,
chilies, salt and pepper in 2 quart casserole dish that has been
sprayed with PAM. Bake at 375 degrees for 15 minutes or until brown.
Makes 8 servings
